BLUEBERRY MUFFINS

This is our favorite blueberry muffins recipe! They’re extra buttery, soft, and moist. For that bakery style goodness, top with freeze-dried blueberries or brown sugar. Prepared with basic ingredients and a couple mixing bowls, you’ll appreciate this easy recipe.

Ingredients

(makes 13 muffins)

50 g margarine
1 egg
1 dl cup sugar
1.5 dl  cup rolled oats
1.5 dl wheat flour
1 tsp. vanilla sugar
1½ tsp. baking powder
0.5 dl tbsp. milk
2 dl frozen blueberries

Melt the margarine. Crack the egg into a bowl. When the margarine has cooled, add it to the bowl along with the sugar and mix.

Mix the dry ingredients separately and then add to the egg mixture. Add the milk and mix.

Finally, fold the frozen blueberries carefully into the batter. Transfer the batter into a muffin tray using two spoons (one to scoop out and pour the batter, one to scrape the batter off the other spoon).

Bake at 225 °C for 10–15 minutes.
