MATJES HERRING, TOSSED POTATOES and HORSERADISH CREAM

Ingredients (serves 4 persons)

400 g matjes herring
600 g new potatoes
50 g butter
1 bundle of dill, finely chopped

Horseradish cream
2 dl smetana, creme fraiche or sour cream
0,5 dl horseradish
salt

Garnish
red onion
fresh dill

Cut the herring into pieces.

Boil the potatoes and pour off water. Melt the butter and toss the potatoes. Finish with the dill just before serving.

Whisk the smetana (creme fraiche or sour cream) so that it becomes fluffy. Mix in the horseradish, season with salt.

Garnish with slices of red onion and fresh dill
