Bread cheese or "juustoleipä” is a buttery, slightly sweet cheese native to Finland. If you want to be authentic, try pronouncing it: hoo-stah-lee-pa. Contrary to the name, there’s no bread in bread cheese. Its name comes from its gorgeous, slightly charred crust that looks an awful lot like a piece of bread. It’s not your average cheese. Bread cheese, also known in English as Finnish squeaky cheese, is a fresh cheese traditionally made from cow's beestings, rich milk from a cow that has recently calved. You can eat it cold or warm, but many people prefer it warm, where the texture turns from slightly “squeaky” to silky and smooth. Warming the cheese doesn’t melt it, but rather softens it slightly. It may be served for example with a variety of jams even though it is often associated with cloudberry jam. A tasty addition to your salad or as side dish. Traditionally, juustoleipä is paired with a cup of hot coffee. That’s right: it’s breakfast and dessert cheese. Because there’s no bad time for cheese. -

Caraway, also known as meridian fennel and Persian cumin have a pungent, anise-like flavor and aroma that comes from essential oils. Caraway is used as a spice in breads, especially rye bread but also in desserts, liquors, casseroles, and other foods. Finland supplies about 28% (2011) of the world's caraway production. Caraway cultivation is well suited to the Finnish climate and latitudes, which ensure long hours of sunlight in the summer. This results in fruits that contain higher levels of essential oils than those produced elsewhere. Some of the potential caraway seeds benefits include increased weight loss, decreased blood sugar and improved digestive health. They are also a great source of several important vitamins, minerals and antioxidants, making them an excellent addition to a well-balanced, healing diet. -
