Bread cheese which is also known in English as Finnish squeaky cheese, is a fresh cheese traditionally made from cow’s beestings, rich milk from a cow that has recently calved. Premium Juustoleipä from Juustoportti is always made from fresh, locally produced and homogenised cow’s milk. The milk is curdled and set to form a round disk from two to three centimeters thick. After this, leipäjuusto is baked, grilled or flambéed to give it its distinctive brown or charred marks.
Bread cheese may be served hot or cold, for example with a variety of jams even though it is often associated with cloudberry jam. A tasty addition to your salad or as side dish.
