Meatballs of elk (moose) meat

Ingredients (4 portions)

500 g elk mince meat
1 yellow onion
1 dl cream
1 dl milk
1 dl breadcrumbs
4 juniper berries (finely chopped)
1 teaspoon allspice (ground)
1 tbsp thyme (dried or fresh)
salt and black pepper

Cooking time 45 minutes

Chop finely the onion and brown it in plenty of butter.
Mix the cream and milk with the breadcrumbs, let it stand and absorb a little.
Mix all the ingredients in a bowl and stir to a smooth batter.
Roll the minced meat into even balls. If you wet your hands with water, it will be easier to roll the dough.
Test fry a meatball and adjust the flavours to your satisfaction.
Finish frying all the meatballs in the frying pan or place them on a baking tray and cook in the oven at 220 degrees until the meatballs are golden brown.

Serve with a good salad, boiled potatoes or oven-roasted vegetables and lingonberry jam.
